Have you read Annie Dillard's essay, "Living Like Weasels?" It's in her book, Teaching a Stone to Talk. It's fabulous. Every time I read this essay I discover something new. An eagle pops in and out of the piece, and Dillard's encounter with a weasel is central. But of course, there's a whole lot more going on too! I think you might like it, if you haven't read it already.

Oh, I would have thought the popinjay, now... Our British Socialist symbol is obviously the robin (I mean the REAL one) with all that red on it, but the bird I should choose would be the wren which was on our currency once like George Washington.
