Heck David, of course you can write an Irish Christmas poem
all you had to do was start

There once was a kid named O'Jesus...

I'll be in Kilkenny, but just for a day.
I'm taking some students to see it in May.
I'd write you some verse, but I don't mean to stay.

Really, I'll be touring Ireland for two weeks with sixteen students, two other faculty members, and assorted spouses and friends, and we will be visiting Kilkenny. Perhaps I can see you, Jim, when I am there.

Susan

Actually it quite a lovely place, you'll all enjoy it.

Yes, the group will spend the night there. I was in Kilkenny once before, in 1995, and I do remember liking the look of the place. Hope to see you, Jim. I am away on vacation now and don't have my itinerary with me, so I can't tell you yet what day we will be there, but I think it is somewhere around May 20-22.

Susan

I'm not sure this is 100% Christmas spirit, but I wrote it for Jim anyway:

A La Cart

She heard the sound of banging at the door.
“Are you the Widow Murphy?” Jimmy cried.
“They call me Mrs Murphy, that’s for sure,
but no, I ain’t no widow,” she replied.
Says Jim, “It may have been a fact before,
but take a look what’s on me cart outside.”
